An Organic Tribute to the Heart and Rebirth of Tuscany
The name “Zimbatò” and the vibrant brand È JAMO (meaning “let’s restart” or “let’s get going”) carry a deep narrative of rebuilding, rediscovering energy, and starting fresh with pure passion. This organic Chianti DOCG is cultivated and vinified under the strictest sustainability standards. The wine is primarily based on Tuscany’s undisputed king, Sangiovese (95%), harmoniously rounded out with small proportions of traditional local grapes, Canaiolo and Malvasia Nera, to add extra color, softness, and aromatic complexity.
Pure Fruit and Natural Fermentation Without Oak Interference
The grapes are gently harvested, destemmed, and thoroughly sorted. Fermentation takes place exclusively using native wild yeasts in temperature-controlled stainless steel tanks, with daily pumping over (remontage) for about 15 days to extract just the right amount of color and soft tannins. The wine then ages entirely in steel and concrete tanks, followed by at least three months of bottle aging before release. This uncompromising and pure winemaking approach ensures that the Chianti’s beloved fresh and floral fruit character remains crisp, vibrant, and completely free from heavy oak influences.
