With their 07 Cuvée Oro, Terre di Grassaga presents a sparkling wine in a class of its own. This wine is crafted for the connoisseur who appreciates an entirely pure and unadorned style. As a true Brut Nature (also known as Pas Dosé or Dosaggio Zero), no expedition liqueur (sugar) is added after the second fermentation. This places immense demands on the quality and ripeness of the grapes, as nothing can be hidden—the result is a bone-dry, honest, and sparklingly pure wine that beautifully reflects its terroir.
Masterful Extended Charmat Method
The wine is crafted from meticulously selected grapes harvested early to preserve a crisp, lively acidity. The second fermentation takes place in temperature-controlled stainless steel tanks using the Charmat method, but with extended aging on the lees. This process imparts a fantastically creamy texture, complexity, and fine, persistent bubbles that dance elegantly in the glass, elevating the tasting experience to new heights.
